Do you need a spot of help with your Food Safety Management System?

Sometimes we just take on too much, or we don’t realise just how much there is to do as we rush through our days managing the safety of the food we work with - and still have to prepare for the auditors who, let's face it, can appear to be quite ruthless at times…

There’s all the documentation to verify, the trend analyses to have ready for the boss on Monday morning, the training to do, the training records to create and file, the corrective actions to attend to and make sure they are closed out, the…

…and the list just goes on and on and on…

For a small monthly retainer, I can most certainly help you with your documentation requirements (it is a real passion of mine). I have a fondness and a love for the HACCP system that I believe is quite uncommon in food safety circles, primarily for 2 reasons.

The first is that many years ago I had the honour of being invited across to work at London Heathrow and London Gatwick airports to further my own training in the system, and whilst there I saw it in action, delivering exactly what it was created to do and when you see a full on HACCP system in action, it is almost a thing of beauty. The second reason is that I have been on the receiving end of a food borne illness - I got a dose of Candida albicans which knocked me flat on my back and very nearly took my life… you can find out more about that here.

Any overarching system such as OHSA, HACCP or FSSC 22000 is built on information. When it comes to HACCP and FSSC 22000, the greater the degree of accuracy that you put into the creation of your documentation, the greater the degree of accuracy of the data that will come back. The greater the degree of accuracy of the data you are working with, the easier it is to develop and maintain your HACCP plan with, develop your trend analyses with and ultimately, run your company with.
